These days it means having plenty left to do, though the phrase curiously used to mean the opposite: bread already baked and stored, with the work done.

Origin
The dictionary maker Littré recorded an older form, avoir du pain cuit sur la planche, meaning your bread was already baked and you could rest. Over time the meaning flipped to the opposite: work still waiting to be done.
